Coconut Ice Cream

This creamy coconut ice cream recipe is a rich dessert you can make at home, with no ice cream maker required! This is something else my mother would make taking advantage of the coconuts we harvested from around 25 coconut trees around our property.
Coconut Ice Cream


  • 1 cup coconut milk
  • 1 cup heavy cream


  • 4 eggs
  • 1/2 cup sugar
  • 2 cups milk
  • 1/2 teaspoon vanilla

Step by Step Instructions

Step 1

Beat the eggs lightly with the sugar.

Step 2

 Scald the milk and stir the eggs. Cook the egg mixture in the top of a double boiler over hot water, stirring constantly, until the mixture coats the spoon. Cool. 

Step 3

Add the vanilla. 

Step 4

Mix coconut and cream. Mix into custard. 

Step 5

Turn into a freezing tray and freeze to a mush. 

Step 6

Remove from freezer, beat well and return to freezer. 

Step 7

When frozen, serve.

Makes 6 -8 servings.
